Nicole Rae Schmidt was born in Minneapolis, Minnesota on December 15, 1990. She grew up in Northeast Minneapolis and most recently resided in Roseville, Minnesota. Nicole was 28 years young and is survived by her; mother Debra Schmidt; Grandmother Donna Schmidt; brothers Ryan, Joe, Kyle and Dillon Schmidt; several nephews and her beloved dog Toulouse. She is preceded in death by; Grandfather Leland Schmidt.

Nicole graduated from Fridley High School in 2009 and followed her passion to become an amazing pastry chef who loved to make treats for family and friends. She had a devotion for animals in need and, especially loved her dog Toulouse. Nicole’s other passions were cooking, baking, arts & crafts and all things Disney especially her two favorite movies: The Lion King and the Nightmare Before Christmas. Nicole enjoyed decorating her apartment with each season of the year, and her favorite time was Halloween. She appreciated spending time with family and friends, especially for holiday gatherings. She cherished spending time with her mom shopping, walking their dogs and simply hanging out. She loved attending Anime conventions with her friends and meeting new people. In January of this year Nicole was proud to celebrate 15 years of being a vegetarian. Nicole dedicated her life to trying to make this world a better place with her witty sense of humor and smile of an angel, she will be dearly missed.

Memorial service will be held at 2:30 PM on May 4th, 2019 at Kozlak-Radulovich Minneapolis Chapel (1918 University Ave NE, Minneapolis)

Nicole will be remembered by everyone whose life she touched.
